Why Choose a Healthy Fish Meal for Valentine’s Day?

When planning a special dinner for yourself and your significant other, choosing healthy white fish dishes like this one ensures the right mix of indulgent and nutritious. Cod is a lean source of protein, rich in omega-3 fatty acids, which are essential for heart health and brain function. Moreover, almonds, lemon, and spinach have their own amazing nutritional benefits: did you know that almonds are loaded with nutrients? Lemon and spinach are also a great combination, with the lemon providing Vitamin C, dietary fiber, and lots of iron and the fresh spinach being rich in vitamins and minerals.

Ingredients:

  • 2 cod filets (about 6 ounces each)
  • 1/4 cup almond flour
  • 1/4 cup sliced almonds
  • Zest of 1 lemon
  • 1 tablespoon olive oil
  • Salt and pepper to taste

  • Pat the cod filets dry with paper towels. Brush each filet with olive oil, then coat with the almond mixture, pressing gently to adhere.
  • Place the coated cod filets on the baking sheet and bake for 12-15 minutes, or until the fish is cooked through and the crust is golden brown.
  • While the cod is baking, wilt the fresh spinach in a skillet over medium heat with a drizzle of olive oil, salt, and pepper.
  • Serve the almond and lemon crusted cod on a bed of wilted spinach and garnish with additional lemon zest, if desired.

My Tips for the Perfect Valentine’s Day Dinner

Creating the perfect Valentine's Day dinner involves more than just cooking a delicious meal—it's about setting the stage for a memorable and romantic evening. Set the mood with soft lighting, candles, and perhaps some romantic music playing softly in the background. Consider serving a glass of wine or champagne to complement the meal and enhance the celebratory atmosphere. As for a sweet course, a decadent treat like chocolate-dipped strawberries or my famous almond butter and chocolate desserts are a perfect choice. When it comes to setting the table, opt for elegant tableware, crisp linens, and perhaps a few fresh flowers as a finishing touch. Remember, it's the thoughtful details that truly make the occasion special!
